Pork Fried Rice
Ingrediants: 3 Egg, couple splashes of vegetable oil, half a yellow onion, 1 carrot, half a cup of peas, ½ a pound of Pork belly, 4 Cups of Rice, 2 tablespoons soy sauce (and another 2 cups), 1 tablespoon fish sauce, 1 teaspoon sesame Oil.
Note: you need a big pot, a big sheet pan, and a wok
Prep: Marinate the pork in the fridge the day before with soy sauce.
put a pot of 8 cups of water on a burner and set to high, once the water is boiling put the rice in and put cover on top. Wait around 8 minutes or until the rice absorbs all the water. (don’t uncover the rice half way through because it can let out steam). One rice in done place rice on big sheet pan and spread out till there is thin sheet of rice over. refrigerate for minimum of half an hour
Dice up the onion, candies the carrot, and mix them up with the peas. and crack all the eggs into a bowl
Cooking: take the rice out and place in bowl (make sure all of ingredients are around you. set the wok to high and wait until very hot. add vegetable oil and quickly add the eggs and stir them rapidly to scramble, add the pork belly and quickly stir around (should cook very quickly)next add the vegetables and stir them very quickly so they do not burn. then add the white rice and stir so it gets mixed up with the egg, meat, and vegetables. add soy sauce, fish sauces, and sesame oil and stir rice is a light brown.

This recipe is fun because it is very rapid though is can be easy because it is so repetitive. the reason for the rice needing to be refrigerated before hand is because it allows the rice to dry out so when it fries with all the oil and the different sauces is doesn’t become a soggy mess. It was one of my favorite dishes to order out from when growing up so it was interesting for me to learn how to make such a delicious dish. I hope that I explained it in a way that makes it easy to understand and you can try it at home.
